Spencer’s Special Ham Glaze

An original from Karen’s teenage son.

1 (12 oz.) can Dr Pepper

⅓ c. brown sugar

1 tsp. garlic powder

½ tsp. cinnamon

¼ tsp. nutmeg

In a small saucepan, simmer all ingredients on medium-low heat until reduced down and thickened to the consistency of syrup. Brush on ham during the last 45 minutes of baking.

Manchego Mashed Potatoes

Manchego is a Spanish cheese made from sheep’s milk. It’s got a unique flavor, so try to find it for this dish. A good place to look for it is Trader Joe’s.

4 lbs. redskin or Yukon gold potatoes

4 Tbs. butter, cut into small pieces

¾–1 c. milk or cream

2 c. Manchego cheese, shredded

salt and pepper to taste

Scrub potatoes, quarter, and place in a deep pot. Cover with cold water. Bring water to a low boil and cook until tender, about 10–12 minutes. Drain potatoes and add back to the hot pot. Add butter, milk or cream, and cheese, and smash the potatoes to desired consistency. The cheese is slightly salty so taste before seasoning with salt and pepper.
